Weekly Joke

Why was the gardener always so happy?

Because he put the petal to the metal when planting his spring flowers!

Spring Flowers

As spring approaches, it's time to plan your garden and choose the best flowers to plant.

Some excellent options include Asiatic lilies, coppertips, gladiolus, dahlias, calla lilies, canna lilies, pansies, peonies, bleeding hearts, marigolds, nemesias, begonias, lily of the Nile, lungwort, and columbine.

These flowers bloom throughout spring, summer, and into fall, adding color and fragrance to your landscape.

Each flower has specific care requirements, such as full sun or part shade and well-draining soil.

Consider these beautiful blooms to create a vibrant garden that will attract pollinators and bring joy throughout the seasons.

Easy Spring Recipes!

Simple Spring Pea Pasta

This light and fresh pasta dish celebrates the simplicity and flavor of spring with just a few ingredients, making it perfect for a quick and easy meal.

Ingredients:

  • 8 ounces pasta (such as farfalle, penne, or fettuccine)
  • 2 cups fresh or frozen peas
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh mint or basil leaves (optional, for garnish)

Instructions:

  1. Cook pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. In the last 3 minutes of cooking, add the peas to the pot. Drain, reserving 1 cup of the pasta water, and set aside.
  2. Sauté garlic: While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Combine pasta and peas with garlic: Add the drained pasta and peas to the skillet with the garlic. Toss to combine, adding a little reserved pasta water as needed to moisten.
  4. Add Parmesan: Remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste. If the mixture seems dry, add a bit more pasta water until you reach your desired consistency.
  5. Serve: Garnish with fresh mint or basil leaves if using. Serve immediately, with extra Parmesan cheese on the side if desired.

Avocado and Strawberry Salad

This vibrant salad combines the creaminess of avocado with the sweetness of strawberries, a delightful pairing for a spring meal. It's incredibly simple to make and requires just a few ingredients.

Ingredients:

  • 2 cups fresh strawberries, hulled and halved
  • 1 large ripe avocado, pitted, peeled, and sliced
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh baby spinach or mixed greens (optional, for serving)

Instructions:

  1. Prepare the fruits: In a large bowl, gently combine the halved strawberries and sliced avocado.
  2. Dress the salad: Drizzle the balsamic vinegar and olive oil over the strawberries and avocado. Gently toss to coat. Season with salt and pepper to taste.
  3. Serve: If using, place a bed of fresh baby spinach or mixed greens on plates. Top with the strawberry and avocado mixture.
  4. Optional garnishes: For added texture and flavor, consider sprinkling with chopped nuts (such as almonds or walnuts) or a sprinkle of goat cheese or feta.
