Easy Crockpot Recipes! 

 Hearty Chicken Taco Soup

Ingredients:

  • 1 lb boneless, skinless chicken breasts
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, undrained
  • 1 (10 oz) can diced tomatoes with green chilies, undrained
  • 1 (8 oz) can tomato sauce
  • 1 (32 oz) container chicken broth
  • 1 packet taco seasoning
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • Optional toppings: shredded cheese, sour cream, avocado, tortilla strips

Instructions:

  1. Place chicken breasts at the bottom of the crockpot.
  2. Add the black beans, corn, diced tomatoes with green chilies, tomato sauce, chicken broth, taco seasoning, chopped onion, and bell pepper on top of the chicken.
  3. Stir to combine. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Half an hour before serving, remove the chicken breasts, shred them with two forks, and return the shredded chicken to the crockpot. Stir well.
  5. Serve hot with optional toppings as desired.

Beef and Broccoli

Ingredients:

  • 1.5 lbs beef chuck roast, sliced into thin strips
  • 1 cup beef broth
  • 2/3 cup soy sauce
  • 1/2 cup brown sugar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 2 tablespoons cornstarch
  • 4 tablespoons cold water
  • 4 cups broccoli florets
  • Cooked rice, for serving

Instructions:

  1. In the crockpot, whisk together beef broth, soy sauce, brown sugar, sesame oil, and minced garlic.
  2. Add the sliced beef and toss to coat with the sauce.
  3. Cover and cook on low for 6 hours.
  4. In the last 30 minutes of cooking, whisk together cornstarch and cold water until smooth. Stir into the crockpot to thicken the sauce.
  5. Add the broccoli florets, cover, and cook on high for an additional 30 minutes, or until the broccoli is tender.
  6. Serve over cooked rice.
